Simply Grand Okara (Okara is fibrous pulp left over from filtering soy milk with Ri-TofuTM filter): Add all of Okara to large non-stick frying pan. Stir in 1 pound of diced daikon raddish, and 3/4 cup each diced carrots, parsley. Stir in 1 large clove of freshly crushed garlic. Heat covered and simmer for 7 minutes. Uncover and mix fully. Add tablespoon of tamari sauce, stirring in well. Serve immediately, refrigerate leftovers, warm up to serve. All-Natural Soy Milk Fruit Smoothie: Blend 8 oz. of chilled Ri-TofuTM soy milk with a small banana and 4 oz. of fresh strawberries. Substitute kiwi fruit (with skin), or blueberries, or fresh pineapple for strawberries in same amount. Serve immediately. Makes a great breakfast or snack! Fresh Tofu eaten at its best: Grate 1-1/2 cups of daikon raddish and spread on medium-sized plate. Generously top with freshly sprouted lentils. Add Bragg Liquid Aminos to taste. Top with well drained, chilled fresh tofu from the Ri-TofuTM appliance. The perfect dinner for Summer evenings. High Energy Sauce (From Chef David Choi, Amitabul Restaurant, Chicago): Blend the following ingredients until smooth: 8 oz. of chilled freshly made soy milk; 3 oz. of unsalted mixed nuts; 3 oz. of Amitabul Black Bean Miso; 1/2 large, fully ripened mango, diced; 2 small cloves of garlic A smooth nutty flavored sauce for marinating, for stir-frying, or on salads. |
